Many flavours of cake can be provided so please PICK YOUR FAVOURITE. Each tier can be different. Some suggested sponge cake flavours are vanilla, chocolate, lemon drizzle, orange, lime, salted caramel, sticky toffee, red velvet, carrot, Jamaican ginger or coffee & walnut. Buttercream can be flavoured with strawberry, raspberry, blueberry, orange, lime, chocolate and caramel. Alcohol (whiskey or brandy) can also be added to certain flavours for either your cupcakes or tiered cake if you wish.
Of course there is also the traditional 'rich fruit cake'. All the fruit is soaked in either sherry or brandy (unless you state otherwise) for at least a week before the cake is made to give it that rich moist texture. I prefer at least 3 months notice prior to the event in order that the cake can "mature" in flavour.
I would stipulate that due to the 'weight ratio' fruit cakes will always have to be the bottom tier, or separate cutting cake at the top of a cupcake tower etc.
